There are abundant sea, mountains, fields and fruit farms within a 15 mile radius of Shinyu Hotel.
In the cuisine that we serve, we make great efforts to use ingredients sourced within a 15 mile radius as much as possible. As guests have made a special effort to visit Unzen, we would like them to full enjoy the wonderful tastes of this region.
This region’s Unzen Kobutakana (a type of brassica) and Japanese anchovies have been recognized as “World Food Heritage.” We thoroughly recommend them to those who have not already tried them.
(However, as these are rare ingredients, there are limited supplies in limited seasons. Please enquire in advance.)

The Shinyu Hotel has Western cuisine chefs as well as Japanese cuisine chefs.
We are not sticklers for traditional Japanese cuisine. Our kitchen continually reviews cooking methods and presentation using ideas with no boundaries.
Please let us know your thoughts once you have sampled our cuisine. We always aim to improve our cooking and we hope you enjoy it.
